Standard Carbon Steel

Roselli's Standard Carbon Steel strikes an ideal balance between sharpness and durability. Although it is not as hard as our UHC Steel, it delivers a keen edge and excellent edge retention. With 0.8% carbon content and a hardness rating of up to 60 HRC, this steel is well-suited for more demanding tasks.

Ultra High Carbon Steel (UHC)

Roselli UHC Steel is renowned for its high carbon content (1.8-2.0%) and exceptional hardness, measuring around 62-63 HRC. This makes it capable of maintaining a razor-sharp edge for extended periods. While its hardness requires more careful handling, it's the ideal choice if you prioritize edge retention.

Damascus steel
